KDF MANDAZI

 KDF is a favourite Kenyan snack. The name KDF originated from the Kenya Defence Forces because the snack is said to defend you against all threats of hunger.

INGREDIENTS

  •  3 cups self-rising flour
  • 3 tablespoon margarine, melted
  • 4 tablespoon sugar
  • 3 eggs 
  • 1/2 cup milk
  • Cooking oil
     

INSTRUCTIONS

  1. In a large bowl, use a wooden spoon to beat together margarine and sugar until creamy.
  2. Add the eggs and milk and whisk thoroughly.
  3. Add the self-rising flour into the bowl and knead into a dough.
  4. Ensure the dough is soft, but not sticky.
  5. Let it rest for 30 minutes.
  6. Roll the dough on a lightly floured board until it is about 1-3 inches thick, depending on how meaty you want your KDF.
  7. Use the knife to cut the dough into rectangles.
  8. Fry the dough in hot oil for 6-8 minutes or until golden brown.
  9. Remove from fire and place the ready KDFs in a bowl lined with paper towel. Serve with tea.
