INGREDIENTS
- 2 cups all-purpose flour.
- 1\2 cup sugar.
- 1 teaspoon baking powder.
- 1\4 teaspoon salt.
- 1\2 teaspoon ground cardamon [optional, for flavor]
- 1\2 cup grated coconut [fresh or desicated]
- 1\2 cup coconut milk.
- 1 egg.
- 2 tablespoon melted butter or oil.
- Oil for frying.
- Powered sugar for dusting[optional]
.INSTRUCTIONS.
- In a mixing bowl combine the all-purpose flour, sugar, baking powder, salt, and ground cardamon[if using]. Mix the dry ingredients well.
- Add the grated coconut, coconut milk, beaten egg, and melted butter or oil to the dry ingredients. mix until a soft, slightly sticky dough forms.
- Transfer the dough to a floured surface and knead it for a few minutes until it becomes smooth and elastic.
- Place the dough back to the mixing bowl, cover it with a clean kitchen towel, and let it rest for about 30 minutes. This resting period allows the dough to relax and develops its flavor.
- After the dough has rested, divide it into small portions .Roll each portion into a ball and then flatten it slightly to form a disc-shaped maandazi.
- You can also use cookie cutters to create various shapes for a more decorative presentations, especially if you are making them for a special occasion.
- In a deep pan or a fryer, heat oil over medium heat, Carefully slide the shaped maandazi into the hot oil, making sure not to overcrowd the pan.Fry them until they puff and turn golden brown, usually 2-3 minutes per slide.
- Remove the fried maandazi from the oil and place the paper towels to drain excess oil.
- If desired, dust the maandazi with powdered sugar for a touch of sweetness before serving.
- Coconut maandazi, are best enjoyed warm and can be served with tea,coffee, or your favorite beverage.
